Yesterday, when I realized I had time to bake, the excitement in me began to grow. I know Valentines day is in 3 months, and that that's the time of the year when you're supposed to be romantic and stuff (although I'm one of those people who think that every day should be filled with love), but I just couldn't keep myself from making pink Valentines day inspired cupcakes...

What you need:
 
For the hearts
  • 200 g soft butter
  • 200 g caster sugar
  • 3 large eggs
  • 200 g flour
  • 1 tbsp whole milk
  • 1/2 tsp vanilla extract
  • Pink/red food colour
 
For the cupcakes
  • 125 g soft butter
  • 125 g caster sugar
  • 2 large eggs
  • 125 g flour
  • 1/2 tsp bicarbonate soda
  • 1 1/2 tbsp whole milk
  • 1/4 tsp vanilla extract
 
For the buttercream
  • 1 cup butter
  • 4 cups icing sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • Food colouring
 
Hearts:
Start by mixing the butter and sugar smoothly. Add the 3 eggs one at a time, while mixing on low speed. Sift the flour into the bowl, and mix for 20 seconds before putting the milk and vanilla extract in. Mix in the red colour, and spread out the smooth mixture into a round tin. Bake in the oven on 160°C for 20 minutes. Let cool before you cut out the hearts.
 
Cupcakes:
Start by sifting the flour with the bicatbonate soda and sugar into a bowl. Add the butter and 2 eggs and start mixing the batter. When it starts feeling smoother, pour in the milk and mix for 30 seconds more. Fill the cupcakes liners (which you have placed in tins) with the batter and stick in a heart into the middle of each cupcake. Bake on 170 °C for 20 minutes.
 
Buttercream:
Mix the butter in a mixer ( I used a bit colder butter than room temperature, but usually, the recommendation is to keep it at room temperature) Add the icing sugar gradually while mixing. Put in the vanilla extract and milk into the cream and keep mixing until the buttercream feels smooth. Add the food colour that you want and mix it in. Pipe the buttercream on to the cupcakes and enjoy!
