If I were to pick one thing in the world to bring everywhere I go, it would be CHOCOLATE. Yes, you guessed it, I'm one of those crazy chocolate monsters that never stop eating. I always make sure there's food nearby (in case of emergency you know). Like the chocolate freak I am, I woke up today, craving for chocolate. This resulted in me eating a bunch of Nutella-filled breadslices, that made the cravings even worse. Because of this, I decided to bake Chocolate cupcakes!

What you need:
- 190 grams of all-purpose flour
- 150 grams of unsweetened cocoa powder
- 1 1/2 teaspoons of baking soda
- 1/2 teaspoon of baking powder
- 70 g dark chocolate chips
- 250 ml boiling water + 2 teaspoons coffee powder
- 250 ml heavy cream
- 2 teaspoons vanilla extract
- 2 large eggs, at room temperature
- 120 ml vegetable oil
- 500 g regular sugar
How to make it:
- Put the chocolate chips into a bowl and pour in the hot water, coffee powder and the vanilla extract.
- Sift the flour, baking soda, baking powder and cocoa powder into a bowl.
- Put the eggs into a mixing machine, whisking on medium speed for 3 minutes while gradually pouring in the oil.
- Add the sugar, cream and the now cold chocolate mixture
- Whisk for 2 more minutes
- Stir in the sifted dry ingredients with a spatula and mix together the ingredients
- Pour the mixture through a sieve over a large bowl to avoid lumps
- Divide the mixture between 20 - 25 cupcake cases
- Bake in the oven for about 20 minutes on 180°C
- Take out from the oven and leave to cool
For the ganache:
- 2,5 dl heavy cream
- 2,5 dl chocolate chips
- 0,5 dl Nutella (directly from the fridge)
- 100 gram cold butter
- Whisk all the ingredients together on medium speed until the texture feels like meringue or when it is enough thick to stay on the whisk
- Put the ganace into a piping bag and pipe on to the cold cupcakes
